The literal translation of ras el hanout from Arabic to English is “head of the shop,” but in reality, it means “top shelf,” both terms implying that this is the very best offering in a spice shop.

  1. Measure all your ingredients into a small glass bowl.
  2. Mix very well until all the spices are well incorporated.
  3. Pour into a clean dry jar and seal well. Spices are best stored in a dark and dry environment, or in the refrigerator in an airtight container.

This recipe uses pre-ground spices. If you want the flavour profile to be lifted, buy your spices whole, roast them and grind them yourself. This will make the final spice mix amazingly aromatic and the flavour deeper and fuller.
